Cream Filled Chocolate Cupcakes


This is how I fill cupcakes!




  • 1 cup (2 sticks) unsalted butter, room temperature, plus more for muffin tins
  • 3/4 cup unsweetened cocoa powder, plus more for muffin tins
  • 2 cups all-purpose flour (spooned and leveled)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups sugar
  • 3 large eggs, room temperature
  • 1 cup sour cream, room temperature
  • FOR THE FILLING
  • 1 1/2 cups marshmallow creme (7.5-ounce jar)
  • 1/2 cup (1 stick) unsalted butter, room temperature

Directions

  1. Preheat oven to 350. Butter two 6-cup (each with a 1-cup capacity) jumbo muffin pans; dust with cocoa powder to coat, tapping out excess. In a medium bowl, whisk together cocoa, flour, baking powder, soda, and salt.
  2. Using an electric mixer, beat butter and sugar until light. Add eggs one at a time, beating well after each addition. On low speed, add half the flour mixture, followed by sour cream, ending with remaining flour mixture; mix just until incorporated (do not overmix).
  3. Divide batter among prepared muffin cups. Bake until a toothpick inserted in center of a cupcake comes out clean, 25 to 30 minutes, rotating pans halfway through baking. Cool in pans, 5 minutes; remove cupcakes and cool, right side up, on a wire rack.
  4. Meanwhile, prepare filling: In a medium bowl, whisk marshmallow creme and butter until smooth. Chill until slightly firm, 15 to 30 minutes. Transfer mixture to a heavy-duty resealable plastic bag, and seal; cut off one corner of the bag to make a 1/8-inch opening.
  5. Using a small melon baller, scoop out center of each cupcake from the bottom, and reserve (you will use this to plug cupcake after filling). Hollow out each cupcake a bit more, discarding crumbs. Insert tip of plastic bag into each cavity, and squeeze to fill; replace plugs. Using remaining filling in plastic bag, decorate top of cupcakes.

Court, working on Savannah's bed!

Tonight we went over to Grandma Loves, while Court worked on making Savannah's bed. It's almost done! This is the back.
The side in the front is the front of the bed, which has a Gard rail.

Savannah's Little Suprises!

Yesterday, when I went to get Savannah from her bus, the helper on the bus asked me if Savannah had brought a flashlight. What? That's a weird question I thought. Then she showed me a hudge BOSH flashlight. ( One of Court's work tools flashlights) It's so Savannah, I thought! I told her, " Yeah, Savannah really loves flashlights. " She must of put it in her back pack the night before.

Then, today when I got Savannah, I'm about to walk away with her when the kids helper on the bus says, "WAIT" and sure enough Savannah had more stuff on the bus that she had stole away, some more surprises in her backpack to play with on the buss... two hair flowers, princess Bell, and a celery stick! LOL She makes me laugh! I wonder what she was thinking. She had celery sticks with her lunch yesterday. I had planned on throwing it away when we got home but Savannah decided she was hungry and ate it in the car. YUCK! She's so crazy! I love that girl of mine!!!

Chocolate Brownie Pudding Trifle

This is my favorite desert ever! If you love chocolate you'll love this trifle!

Chocolate Brownie pudding Trifle

Layer 1 brownies( fudge brownies, Pillsbury)
Layer 2 chocolate pudding, mixed with whipping cream(I like to use cook and serve pudding)
Layer 3 Whipping cream( do NOT use canned)
Layer 4 Toffee bits
Repeat layers 1 through 4

50's Poodle Skirt

For our Young Womens New Beginnings, we are having a 50' s show theme. I decided to make myself a Poodle skirt. Joann's Fabrics has their felt on sell for really cheap this week. For Halloween this year I'm just going to make another little yellow one for Savannah! I'm so excited! It was really fun making it, even though I made a lot of mistakes that I will NOT make next time!


It looks a lot better in person!

New Sewing Machine and Bean Bags

My mom got me a sewing machine for Christmas/ Birthday, and Court got me a cute tote to put it in and some stuff to go with it! I love it! I have so many Crafts I'm going to make! I am so excited!

Bean bags for one of Savannah's birthday party games were my very first project on my sewing machine! They're not perfect, but I'm pretty proud on myself!
