Paleo Fajitas
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp chili powder
- 1 tsp sea salt
- 1 lb boneless, skinless chicken breasts, sliced into strips
- 1 Tbs coconut oil
- 1/2 onion, sliced
- 1 red, 1 orange, and one yellow bell peppers, sliced
- juice of 1 lemon
- juice of 1 lime
- 2 heads romaine lettuce, washed and dried
In a medium bowl, combine garlic, cumin, oregano, chili powder,
and sea salt. Toss chicken in mixture until fully coated
and set aside.Heat a large saute pan over medium-high heat. When pan is hot, add coconut oil.Saute
onion for 3 minutes. Add chicken and continue to cook until chicken is
almost fully cooked (about 10-15 minutes), stirring often.Just before chicken is done, add peppers, lemon and lime juice. Stir and cook for 2 more minutes.Serve over lettuce and top with home made salsa. Guacamole would be yummy too!
