White Chocolate Cherry Shortbread Cookies

White Chocolate Cherry Shortbread Cookies

1/2 cup maraschino cherries, finely chopped
2 1/2 cups flour
1/2 cup sugar
1 cup cold butter
2/3 cup white chocolate chips, chopped
1/2 tsp almond extract
2 drops red food coloring (optional)
For dipping:
1 1/3 cups white chocolate chips
2 tsp shortening or oil (NOT butter or margarine!)
Drain and chop the cherries; set aside. In a large mixing bowl, combine flour and sugar. Cut the butter into the flour mixture using a pastry blender. Hint: Let the butter sit out for 10-15 minutes, or it is very difficult to mix in. It took me forever! After the butter/flour mixture is crumbly, add the cherries, 2/3 cup white chocolate, and food coloring. It will still be really crumbly, but don't panic. Knead for a few minutes till the dough becomes smooth. Again, my butter was too cold, so this took me forever, but eventually it worked out. Roll dough into 1" balls and place on cookie sheets. Use the bottom of a glass dipped in sugar to flatten each of the balls out. Bake at 325° for about 10-12 minutes. Cool completely.

In a small glass bowl, melt the shortening in the microwave. Add the 1 1/3 cups white chocolate. Microwave at half power, stirring every 30 seconds, till smooth. Dip half of each cookie in the melted chocolate and place on waxed paper till chocolate sets up.

-Makes 4-5 dozen cookies depending on size.

They are so yummy and perfect for Valentines day! This was my second batch in two weeks! On this batch I chopped up red chocolate melting chips and mixed them in! I made this one for a friend of mines valentines party.They are so addicting!

12 Days of Christmas Goodies

I love baking, especially around the Holidays for family and friends! I am going to be posting 12 days of Christmas goodies!!! Some recipes, like this one will be a re post from last year. Have fun baking! I know I will!!

I am also going to make it a goal for me to post something every day this month!!I have lots of recipes, Christmas crafts and Christmas traditions to share!
Dip Oreo's in milk or white chocolate,drizzle with white chocolate, then crushed candy canes and sprinkled on top. These are supper easy! I like to use the chocolate blocks at Macey's!Everyone loves these!!!

Last year I made these and homemade Carmel for friend gifts!

Cheerios and Crawling!

This is what we have been up to the last couple of weeks! Xander has been eating lots of cheerios!
Xander started crawling Sunday, January 23 at nine months!!!
I took care of sick kids with runny noses, including myself.
I've been trying to make sure we have more semi family dinners. Court's usually at school until seven this semester, so he doesn't get to eat with us.
Grandma and Grandpa Jensen got Savannah a tent for her birthday! Savannah loves to read books in it and put her toys in it and play. She doesn't like her little brother in it though. LOL

They have so much fun with it!!!
I baked cookies for Visiting teaching.
I made marshmallow pops for our beehives!
My friend Jamie and I made homemade mint marshmallows! It was really fun!!!

Oreo Cookies

Oreo Cookies

Cookies
1 package devils food cake mix
1 c. Shorting
2 eggs

Bake at 350 degrees for 8 minutes

Frosting
2 oz. cream cheese
2 TBL. butter
1 c. & 2 TLB. powdered sugar
1/4 tsp. Valina

Savannah's Cookies for her Birthday at School!

Love Family Sugar cookie Recipe

1 C. Butter
2 C. Sugar
2 Eggs
1 C. Sour Cream
1 TLB. Valina
1/2 tsp. Backing Soda
4 tsp. Baking Powder
1/2 tsp. Salt
5-6 C. Flour

Let sit in the fridge for at least an hour. Bake at 350 degrees for 10-12 minutes.
They are the greatest!!!
Royal Icing
  • 3-3/4 to 4 cups confectioners' sugar
  • 3 tablespoons meringue powder
  • 5 to 6 tablespoons warm water
  • In a large bowl, combine all ingredients. Beat on high speed with a portable mixer for 10-12 minutes or on low speed with a stand mixer for 7-10 minutes or until peaks form. Yield: 3 cups.

Decorating Christmas Cookies!

My sister-in-law invited us to decorate cookies at her house. Savannah was so excited when she saw all of the cookies! She decorated three, and she loved that there was yellow icing, and yellow marshmallows!
Savannah really liked the icing!

2 cookies...
1 cookie...
She would eat all of the toppings, then the icing first.
As much as it killed me inside, Savannah ate a total of four cookies. She loved it! I have to tell myself, "it's Christmas, it's Christmas, it's going to be okay, just this once."
Xander is getting so close to crawling! He loves going over to Aunt Erin's! He's the center of attention, with all of her girls wanting to hold him. He loves it!
These are my attempt at decorating. Savannah picked the color for the bell, and the snowman's buttons!
